Exploring the Holy Island of Lindisfarne is something I have been wanting to do for the longest time. After reading about a remote island totally cut off unless the tide is out I have been wanting to see it for myself. Travelling over a coastal road, seeing a town cut off from the world and exploring the place people go on pilgrimage from all over the world is so exciting. Staying in our Airbnb cottage was the perfect base for a day at Holy Island / Lindisfarne and was our main reason for our visit to Northumberland.
As a parent I am a huge advocate for cooking homemade, nutritious meals from scratch. But I am also a busy, working, single mum who knows there are times you will need a quick and easy meal from the freezer. Some days work runs over and I am late home, some days I forget to take meat out of the freezer the night before, and some days I just don’t want to cook.
